Besto Sushi began as a small sushi counter driven by a simple idea: make sushi with respect for ingredients and a focus on flavour and balance. Over time, the team grew while keeping the same hands-on approach to rice, knife work, and plating. We built relationships with local fishmongers and sustainable suppliers to ensure quality and traceability. Today, Besto Sushi offers approachable omakase, signature rolls, and fast pick-up for busy diners across Ontario. Our dining room reflects this evolution, with warm natural materials and a clean aesthetic that highlights the food. We aim to create a welcoming experience where guests —whether they are new to sushi or long-time enthusiasts— can enjoy seasonal menus that change with the best available produce and seafood.
Philosophy & sourcing
At the center of our cooking is an emphasis on ingredient integrity and simple technique. We prioritize fish and seafood from suppliers who practice responsible harvesting and transparent traceability. This means choosing Atlantic and Pacific catches that are abundant and handled with care from sea to counter. Vegetables and garnishes come from regional farms whenever possible, supporting local agriculture and reducing food miles. Our rice is seasoned precisely to complement the fish, and accompaniments such as soy, vinegar, and citrus are used to enhance taste without overpowering natural flavors. Sustainability is not only a sourcing choice but a daily practice in the kitchen: reducing waste, using whole fish when feasible, and rotating menu items in response to seasonality.
